The Adzuki Bean is similar to Chinese bean sprouts but crisper and is has a sweeter flavor. The sprouts have a very high level of vitamins. Adzuki Beans can be prepared deep fried, stir-fried, steamed, or fresh as part of a salad. Adzuki beans are the cousin to the Mung Bean. They are delicious just as they are or with a dressing.
